It seems as if the only things that I can eat are low carb veggies and salad. I read articles and diets where people are eating bread, pasta, fruit….. my numbers shoot high is I eat anything besides low carb veggies and salad. Will there come a day where I will be able to eat more of a variety? I’d just love to know what mindset to have here. Frustrating day Thanks
Mary, yes, you’ll be able to add grains back in as you heal your insulin resistance. Until you do those will be continue to spike you because that’s how your body is responding to them with your insulin resistance.
